When you love what you do, is it even work? Well, yes. Especially if you are the passionate couple behind Niwot’s incredible new restaurant Farow. Lisa and Patrick Balcom joined forces to bring Farow to life in 2021 to much applause. The cuisine is the perfect combination of local ingredients transformed into flavorful dishes with a Southern spin. Their commitment to sourcing the highest quality ingredients is evident as they were nominees in their very first year for the Slow Food Award and a record-breaking amount of write-in ballots for a first-year restaurant in Boulder Weekly’s Best of Boulder County—resulting in numerous wins. Their dishes are made with ingredients no more than 10 miles away, making fresh an understatement when talking about the meals that come out of their kitchen. On top of working closely with local purveyors, Farow has also ensured that its pastry and beverage programs are cutting edge. Owner Lisa Balcom is a trained pastry chef whipping up seasonal sweets that leave you longing for more. Their bar hosts an interactive cocktail class monthly to educate their diners in an engaging way as they sip the night away. However, the most beautiful thing at Farow (outside the insane green chile hushpuppies with honey butter) is how committed and excited their team is to bring unique and delicious meals to every guest. The good vibes are very real here making it a wonderful dining experience through and through!
