After opening Ash’Kara Denver, the owners Chef Daniel Asher & Josh Dinar saw a need for the “unorthodox cuisine” to come to Boulder. Ash’Kara’s menu is an exploration of contemporary Israeli cuisine, borrowing flavors from throughout the regions of the Middle East, Mediterranean, and Northern Africa. Having an opportunity to bring Ash’Kara to Boulder, where Chef Daniel Asher is rooted with his family and where their flagship River & Woods restaurant is located, felt like the right move for the duo. In May 2021, after a year-long pause from riding the pandemic restaurant rollercoaster, Ash’Kara Boulder opened its doors on Pearl Street. Enchanted by Chef Daniel’s hand-spun hummus, Kobe beef latkes, steaming hot pita, and variety of veggie-forward tagine dishes, the atmosphere of Ash’Kara is made for sharing dishes, and enjoying a slower dining more in-depth dining experience.
